Lemon Poppy Madeleines

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 tablespoon Hasho Poppy Seeds

  • 1/2 cup butter, melted

  • 1/2 cup sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • Zest of 1 lemon

  • 2 tablespoons fresh lemon juice

  • Powdered sugar for dusting

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a madeleine pan.

  2. In a small bowl, whisk together the flour, baking powder, salt, and poppy seeds.

  3. In a separate bowl, beat the eggs and sugar until light and fluffy.

  4. Stir in the melted butter, vanilla extract, lemon zest, and lemon juice.

  5. Gradually fold in the dry ingredients until just combined.

  6. Spoon the batter into the madeleine pan, filling each mold about 3/4 full.

  7. Bake for 10-12 minutes, or until the edges are golden.

  8. Let the madeleines cool slightly, then dust with powdered sugar before serving.
