Crispy Poppy Granola
Ingredients:
2 cups rolled oats
1/2 cup raw almonds, roughly chopped
1/2 cup Hasho poppy seeds
1/4 cup shredded coconut (optional)
1/3 cup maple syrup or honey
1/4 cup coconut oil or olive oil
1/2 tsp sea salt
1/2 tsp cinnamon
1 tsp vanilla extract
Instructions:
Preheat oven to 325°F (160°C). Line a baking sheet with parchment.
In a large bowl, mix oats, almonds, poppy seeds, coconut, salt, and cinnamon.
In a small saucepan, warm the syrup, oil, and vanilla until just combined.
Pour wet mixture over dry ingredients. Stir to coat everything evenly.
Spread onto baking sheet in an even layer.
Bake for 25–30 minutes, stirring halfway, until golden and crisp.
Cool completely — it crisps up as it cools. Store in an airtight jar.
